Ingredients

  • 2 tbsp oil
  • 1 large yellow onion, chopped
  • ½ tsp salt
  • black pepper
  • 1 butternut squash, peeled, seeded, and chopped
  • 3 garlic cloves, minced
  • ½ tbsp rosemary, minced
  • 1 tsp ginger, grated
  • 3 cups veggie broth
  • cottage cheese

Recipe

  1. Heat 2 tbsp oil
  2. Add 1 large yellow onion (chopped), ½ tsp salt, and black pepper - saute for 5 mins
  3. Add 1 butternut squash (peeled, seeded, and chopped) and cook for 9 mins
  4. Add 3 garlic cloves (minced), ½ tbsp rosemary (minced), 1 tsp ginger (grated) and cook for 1 min
  5. Add 3 cups veggie broth and let boil
  6. Reduce heat and let simmer for 20-30 mins until squash is tender
  7. Blend with cottage cheese
