butternut squash soup

- 2 tbsp oil
- 1 large yellow onion, chopped
- ½ tsp salt
- black pepper
- 1 butternut squash, peeled, seeded, and chopped
- 3 garlic cloves, minced
- ½ tbsp rosemary, minced
- 1 tsp ginger, grated
- 3 cups veggie broth
- cottage cheese
- Heat 2 tbsp oil
- Add 1 large yellow onion (chopped), ½ tsp salt, and black pepper - saute for 5 mins
- Add 1 butternut squash (peeled, seeded, and chopped) and cook for 9 mins
- Add 3 garlic cloves (minced), ½ tbsp rosemary (minced), 1 tsp ginger (grated) and cook for 1 min
- Add 3 cups veggie broth and let boil
- Reduce heat and let simmer for 20-30 mins until squash is tender
- Blend with cottage cheese
