- Cook rice in coconut milk (1:1.5 ratio).
- Saute onion and tofu until tofu browns.
- Add bell pepper, baby corn, broccoli, edamame, and pineapple.
- Add rice and stir to combine.
- Add sauce made of soy sauce, sriracha, honey, and chili onion crunch oil.
- Roast cashews in air fryer and add on top.
