black bean & plantain bowl

Ingredients

  • 1-2 plantains
  • oil (spray)
  • 1/4 cup cilantro
  • 1/4 cup red onion
  • 1 jalapeno
  • 4 cloves minced garlic
  • lime juice
  • salt
  • oil
  • 1 chopped tomato
  • 1 can of beans

Recipe

  1. Cut 1-2 plantains in 1/4 inch slices
  2. Spray with oil
  3. Air fry at 400 for 10 mins, flipping halfway
  4. Blend: 1/4 cup cilantro, 1/4 cup red onion, 1 jalapeno, 4 cloves minced garlic, lime juice, and salt
  5. Saute blended mixture with oil in a pan for 3-4 mins
  6. Add 1 chopped tomato
  7. Add 1 can of beans
  8. Cook and mash for 5 minutes

Plate with rice, beans, plantains, sour cream/greek yogurt, and avocado slices
