black bean & plantain bowl

- 1-2 plantains
- oil (spray)
- 1/4 cup cilantro
- 1/4 cup red onion
- 1 jalapeno
- 4 cloves minced garlic
- lime juice
- salt
- oil
- 1 chopped tomato
- 1 can of beans
- Cut 1-2 plantains in 1/4 inch slices
- Spray with oil
- Air fry at 400 for 10 mins, flipping halfway
- Blend: 1/4 cup cilantro, 1/4 cup red onion, 1 jalapeno, 4 cloves minced garlic, lime juice, and salt
- Saute blended mixture with oil in a pan for 3-4 mins
- Add 1 chopped tomato
- Add 1 can of beans
- Cook and mash for 5 minutes
Plate with rice, beans, plantains, sour cream/greek yogurt, and avocado slices
