air fryer cripsy rice with tofu

- sushi rice (or basmati rice)
- avocado oil
- tofu
- cornstarch
- salt
- pepper
- chili powder
- sriracha
- mayo
- avocado
- scallions
- Cook sushi rice (basmati rice works too)
- Grease or line a flat tray/container and pat rice flatly down
- Put rice in the fridge until cool (freezing a little and then moving to the fridge can help)
- Cut the rice into rectangles
- Spray with avocado oil and air fry at 400 degrees for 12-15 mins, flipping halfway
- Cut tofu into rectangles smaller than rice
- Coat tofu in cornstarch, salt, pepper, chili powder
- Saute tofu in pan
- Combine sriracha and mayo to make spicy mayo
- Layer rice, then avocado, then tofu, and top with scallions
- Drizzle with spicy mayo
Optional: coat tofu in a mixture of soy sauce, honey, sesame oil, garlic, and cornstarch before sauteing
