Ingredients

  • ½ cup water
  • ¼ cup quinoa
  • 1 can black beans (rinsed & drained)
  • ½ cup bread crumbs
  • ¼ cup minced yellow bell pepper
  • 1 egg
  • 2 tbsp minced onion
  • 1 clove minced garlic
  • 1 tsp cumin
  • 1 tsp sriracha
  • ½ tsp salt
  • olive oil
  • mashed avocado
  • lite cheddar cheese
  • ketchup
  • mayo
  • chili powder
  • onion
  • lettuce

Recipe

  1. Bring ½ cup water and ¼ cup quinoa to a boil, reduce heat to medium-low, cover and let simmer for around 15 mins (until water is absorbed).
  2. Roughly mash 1 can black beans (rinsed & drained) with a fork.
  3. Mix quinoa, ½ cup bread crumbs, ¼ cup minced yellow bell pepper, 1 egg, 2 tbsp minced onion, 1 clove minced garlic, 1 tsp cumin, 1 tsp sriracha, and ½ tsp salt with mashed black beans.
  4. Form into 5 patties.
  5. Cook patties in olive oil until brown on each side.
  6. Form burger with mashed avocado, patty, lite cheddar cheese, ketchup + mayo + chili powder, onion, and lettuce.
