quinoa black bean burgers

- ½ cup water
- ¼ cup quinoa
- 1 can black beans (rinsed & drained)
- ½ cup bread crumbs
- ¼ cup minced yellow bell pepper
- 1 egg
- 2 tbsp minced onion
- 1 clove minced garlic
- 1 tsp cumin
- 1 tsp sriracha
- ½ tsp salt
- olive oil
- mashed avocado
- lite cheddar cheese
- ketchup
- mayo
- chili powder
- onion
- lettuce
- Bring ½ cup water and ¼ cup quinoa to a boil, reduce heat to medium-low, cover and let simmer for around 15 mins (until water is absorbed).
- Roughly mash 1 can black beans (rinsed & drained) with a fork.
- Mix quinoa, ½ cup bread crumbs, ¼ cup minced yellow bell pepper, 1 egg, 2 tbsp minced onion, 1 clove minced garlic, 1 tsp cumin, 1 tsp sriracha, and ½ tsp salt with mashed black beans.
- Form into 5 patties.
- Cook patties in olive oil until brown on each side.
- Form burger with mashed avocado, patty, lite cheddar cheese, ketchup + mayo + chili powder, onion, and lettuce.
