Peanut Noodles

- 3 cloves minced garlic
- 1 tsp chopped ginger
- red onion or scallions
- salt
- pepper
- chili flakes
- 0.5 tbsp sesame oil
- 40g noodles
- 3 tbsp soy sauce
- 4 tbsp pb2
- 2 tbsp rice vinegar
- 2 tsp fried chili in oil
- 1 tbsp honey
- noodle water
- air fried tofu
- edamame
- sesame seeds
- Cook on low heat until garlic browns: 3 cloves minced garlic, 1 tsp chopped ginger, red onion or scallions, salt, pepper, chili flakes, 0.5 tbsp sesame oil
- Boil 40g noodles as directed
- Once garlic browns slightly, add: 3 tbsp soy sauce, 4 tbsp pb2, 2 tbsp rice vinegar, 2 tsp fried chili in oil, 1 tbsp honey, noodle water
- Add noodles and stir
- Add air fried tofu, edamame, and top with sesame seeds
