Peanut Noodles

Ingredients

  • 3 cloves minced garlic
  • 1 tsp chopped ginger
  • red onion or scallions
  • salt
  • pepper
  • chili flakes
  • 0.5 tbsp sesame oil
  • 40g noodles
  • 3 tbsp soy sauce
  • 4 tbsp pb2
  • 2 tbsp rice vinegar
  • 2 tsp fried chili in oil
  • 1 tbsp honey
  • noodle water
  • air fried tofu
  • edamame
  • sesame seeds

Recipe

  1. Cook on low heat until garlic browns: 3 cloves minced garlic, 1 tsp chopped ginger, red onion or scallions, salt, pepper, chili flakes, 0.5 tbsp sesame oil
  2. Boil 40g noodles as directed
  3. Once garlic browns slightly, add: 3 tbsp soy sauce, 4 tbsp pb2, 2 tbsp rice vinegar, 2 tsp fried chili in oil, 1 tbsp honey, noodle water
  4. Add noodles and stir
  5. Add air fried tofu, edamame, and top with sesame seeds

Makes 2 servings.
