Ingredients

  • 1 block extra firm tofu, ripped or cubed
  • 1 block halloumi
  • olive oil
  • 2 tbsp lemon juice
  • 1.5 tbsp soy sauce
  • honey
  • garlic powder
  • paprika
  • cumin
  • salt
  • black pepper
  • sprinkle of basil flakes (any herb)
  • red onions
  • cucumbers
  • red wine vinegar
  • 1 can chickpeas
  • chili powder
  • ½ cup grated cucumber
  • ¾ cup plain Greek yogurt
  • 1-2 garlic cloves
  • 1.5 tbsp lemon juice
  • 1 tsp red wine vinegar
  • pepper
  • avocado

Recipe

  1. Make the marinade by combining olive oil, 2 tbsp lemon juice, 1.5 tbsp soy sauce, honey, garlic powder, paprika, cumin, salt, black pepper, and a sprinkle of basil flakes.
  2. Soak tofu and halloumi in marinade for at least 15 mins.
  3. Air fry tofu at 400 for ~12 mins, shaking halfway.
  4. Air fry halloumi at 350 for ~6 mins, shaking halfway (watch out as it can burn easily).
  5. Soak red onions and cucumbers in red wine vinegar.
  6. Toss 1 can chickpeas in olive oil and chili powder, then roast at 400 for 20 mins, flipping halfway.
  7. Make tzatziki: combine ½ cup grated cucumber, ¾ cup plain Greek yogurt, 1-2 garlic cloves, 1.5 tbsp lemon juice, 1 tsp red wine vinegar, olive oil, salt, and pepper.
  8. Serve bowls with tofu, halloumi, chickpeas, onions, cucumbers, avocado, and tzatziki.

Halloumi can burn easily, so watch it closely when air frying.
