Lemon Ricotta Pasta with Garlic

Ingredients

  • 8 oz (225 g) pasta
  • 2 cloves garlic
  • butter or olive oil
  • 1 cup whole-milk ricotta
  • zest of 1 lemon
  • juice of 1 lemon
  • ¼ cup grated parmesan
  • salt and pepper
  • hot pasta water as needed

Recipe

  1. Boil 8 oz (225 g) pasta.
  2. Saute 2 cloves garlic in butter or olive oil for 30-60 seconds until just brown.
  3. Remove pan from heat and stir in 1 cup whole-milk ricotta, zest of 1 lemon, juice of 1 lemon, ¼ cup grated parmesan, salt and pepper, and hot pasta water as needed.

Serve with vegetables of choice.
