Lemon Ricotta Pasta with Garlic

- 8 oz (225 g) pasta
- 2 cloves garlic
- butter or olive oil
- 1 cup whole-milk ricotta
- zest of 1 lemon
- juice of 1 lemon
- ¼ cup grated parmesan
- salt and pepper
- hot pasta water as needed
- Boil 8 oz (225 g) pasta.
- Saute 2 cloves garlic in butter or olive oil for 30-60 seconds until just brown.
- Remove pan from heat and stir in 1 cup whole-milk ricotta, zest of 1 lemon, juice of 1 lemon, ¼ cup grated parmesan, salt and pepper, and hot pasta water as needed.
Serve with vegetables of choice.
