- 6 cloves garlic
- 70g red onion
- 40g red curry paste
- 1 tbsp sesame oil
- 1 can low fat coconut milk
- 16g PB2
- 200g sweet potato
- 70g carrot
- 90g bell pepper
- 130g cabbage
- 2 blocks tofu (cubed and air-fried)
- 12g soy sauce (less sodium)
- 10g honey
- lemon juice
- saute 6 cloves garlic, 70g onion, 40g red curry paste in a pan until fragrant in 1 tbsp sesame oil
- add 1 can low fat coconut milk and stir to thicken
- add 16g PB2
- add 200g sweet potato, 70g carrot and cook till they soften
- add 90g bell pepper, 130g cabbage, 2 blocks of air fried tofu
- add 12g soy sauce, 10g honey, and a splash of lemon juice
