Ingredients

  • 6 cloves garlic
  • 70g red onion
  • 40g red curry paste
  • 1 tbsp sesame oil
  • 1 can low fat coconut milk
  • 16g PB2
  • 200g sweet potato
  • 70g carrot
  • 90g bell pepper
  • 130g cabbage
  • 2 blocks tofu (cubed and air-fried)
  • 12g soy sauce (less sodium)
  • 10g honey
  • lemon juice

Recipe

  1. saute 6 cloves garlic, 70g onion, 40g red curry paste in a pan until fragrant in 1 tbsp sesame oil
  2. add 1 can low fat coconut milk and stir to thicken
  3. add 16g PB2
  4. add 200g sweet potato, 70g carrot and cook till they soften
  5. add 90g bell pepper, 130g cabbage, 2 blocks of air fried tofu
  6. add 12g soy sauce, 10g honey, and a splash of lemon juice
